CBDB (Chenin Blanc Dynamic Blend) - Most of the wine is Chenin Blanc. But for good measure we have co-fermented a bit of Viognier (4%) with natural yeasts from the skins of the berries.
The wine was split into thirds; with a third barrel fermented in old oak, a third put into granite like vessels and a third undergoing malolactic fermentation. The wine was left for 10 months in these vessels to mature with a little bit of stirring. Nothing except a touch of sulphur (for stability) and a little clay (for clarity) was added prior to bottling the wine unfiltered.
